Asparagus and Herb Soup

Wash, peel and cut the asparagus into small pieces.

Peel the onion and finely dice it.

Heat the butter in a pot and gently sauté the asparagus pieces and diced onion over medium heat until translucent.

Pour in the broth and cream and stir everything well.

Let the soup gently simmer for about 15 minutes, until the asparagus is tender.

Purée the soup until smooth and creamy.

Chop the chives, parsley and oregano and stir them into the puréed soup.

Season with salt, pepper and nutmeg and, if the soup is too thin, thicken it briefly.
