Vinschger Snow Milk

Juice the lemon(s) and finely grate the zest of one lemon.

Remove the crust from the white bread and place it in a bowl. Moisten evenly with lemon juice, rum and a little water.

Add sugar, lemon zest, sultanas, chopped hazelnuts and finely chopped fig to the bread.

Mix everything thoroughly until the mixture is evenly moist and well combined.

Cover the bowl with cling film and let the mixture rest for 1–2 hours.

Whip the cream until stiff peaks form.

Portion the bread mixture onto a large plate, spread the cream on top and sprinkle with cinnamon sugar. Place in the middle of the table and serve with four spoons.
