Savoy Cabbage Cream Soup

Peel and finely dice the onion. Clean the savoy cabbage, wash it and cut it into thin strips.

Heat oil in a large pot. Sauté the onion until translucent, then briefly sauté the savoy cabbage.

Sprinkle the savoy cabbage with flour and briefly cook while stirring.

Stir in the water and vegetable broth, bring everything to a boil and simmer, covered, for about 15 minutes.

Remove about one third of the savoy cabbage strips from the soup and set aside.

Puree the remaining savoy cabbage in the soup until smooth and bring the soup to a boil again.

Stir the cream cheese in as small dollops until it melts, then season the soup with salt and pepper.

Heat the reserved savoy strips in the soup and then serve.
