Polish Egg Spread

The eggs should be completely cooled so the yolks can be removed more cleanly.

The finer you chop, the creamier and more spreadable the paste will be.

Squeeze out any excess liquid well so the spread doesn’t become watery.

For a milder garlic flavor, let the crushed garlic rest for 1–2 minutes before mixing.

A fork or a small whisk makes the yolk mixture especially smooth.

Add the chives last so they stay especially fresh and aromatic.

Give it a quick stir before serving and adjust seasoning if necessary.
