Toffifee Muffin

If you use paper liners, the muffins will bake particularly evenly when also supported by a sturdy muffin tray.

The nougat should only be lukewarm so that the egg in the later mixture does not set.

A quick whisk helps distribute the leavening agents especially evenly through the flour.

Ingredients at room temperature are easier to combine uniformly.

Do not mix too long, otherwise the muffins will become rather dense.

Fill the cases only about three quarters full so nothing overflows.

Do a skewer test at the edge (not directly through the Toffifee); this gives a more reliable result.

A dollop of nougat or a light dusting of powdered sugar pairs especially well with the hazelnut aroma.
