Lebkuchen Pancakes

For best results, sift the baking powder into the flour briefly so it distributes more evenly.

Stir only until there are no more lumps of flour.

The finer the pieces, the more even the pancakes and the less will stick when flipping.

If the batter is very thick afterward, stir in milk by the tablespoon until it has a thick, pourable consistency.

Choose medium heat so the lebkuchen pieces don't darken too quickly.

Flip as soon as the surface looks slightly dull and small bubbles appear.

Cinnamon whipped cream or jam pair especially well for serving.
