Danube Waves Cream

If fresh cherries aren't available, drained Morello cherries work well.

For an alcohol-free version, use cherry juice or a little syrup instead of sherry.

A few larger pieces add more bite to the layers later.

Work with well-chilled sour cream for a firmer cream.

Don't overmix so the cream stays light and airy.

For clean glass edges, fill the cream using a spoon or a piping bag.

Using a small sieve will distribute the cocoa finely and evenly.

10–15 minutes in the refrigerator gives the cream more stability and allows the flavors to meld.
