Cocoa Cookies

Preheat the oven to 160 °C fan (conventional oven: 180 °C) and line a baking tray with parchment paper.

Place the butter and sugar in a mixing bowl and beat with a hand mixer (whisk attachment) until creamy.

Add the egg and vanilla sugar and briefly mix in until well combined.

In a separate bowl, combine the flour, cocoa powder, baking powder and a pinch of salt.

Add the dry ingredients to the butter-and-egg mixture and quickly stir into a smooth dough.

Scoop portions of dough with a teaspoon, roll them in powdered sugar and shape into balls.

Bake the cookies for 10–12 minutes, then remove from the oven.

Let the cookies cool briefly on the tray, then transfer to a wire rack to cool completely.
