Chocolate Cookies with Sour Cherries

Preheat the oven to 190°C (top/bottom heat) and line a baking sheet with parchment paper.

Cream the softened butter and sugar together in a bowl.

Stir in the egg yolk (lightly beaten) and vanilla extract until well combined.

Sift the flour, cocoa powder and a pinch of salt over the mixture and briefly work in.

Coarsely chop the dark chocolate and dried sour cherries and fold into the dough.

Scoop tablespoon-sized portions of dough, roll into balls, place on the baking sheet with enough space between them, and press the balls slightly flat.

Bake the cookies for 12–15 minutes, until the edges appear set.

Let the cookies rest on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
