Tuna Cream

The drier the tuna, the creamier the spread — pressing it briefly in a sieve is worthwhile.

Add the horseradish sparingly at first and adjust at the end so the cream doesn’t become too strong.

Taste again after 10 minutes of resting — the flavor will have rounded out.

For neat bites, toast the bread briefly before spreading — it will stay crisp longer.
