Sweet Yeast Rolls

In a large bowl, combine flour, salt, grated lemon zest, (dry) yeast and vanilla sugar.

Add the egg, lukewarm milk and melted (not hot) butter and knead everything into a smooth, elastic dough.

Cover the dough and let it rise in a warm place for about 30 minutes.

Briefly knead the dough again, divide it into 10 equal pieces and shape each piece into a smooth ball.

Place the dough balls with some space between them on a baking sheet lined with parchment paper and brush them lightly with milk.

Cover the rolls and let them rise again for about 20 minutes.

Bake in the preheated oven at 160 °C (fan) for 25–30 minutes until the rolls are golden.

While still hot, brush the rolls with sugar water and then cool them on a wire rack.
