Spinach Noodles

Fill a large pot with plenty of water, bring to a boil and salt well.

Cook the ribbon noodles in the boiling salted water until al dente.

Peel and finely dice the onion and sauté in a pan until golden.

Wash the fresh leaf spinach, drain well and briefly sauté with the onions.

Deglaze with the cream and let simmer gently for about 10 minutes, then season with salt, pepper, pressed garlic and curry and simmer for another 5 minutes.

Drain the noodles, add them to the spinach sauce and toss well to combine.
