Nutella Muffin

The cases hold their shape better when they're placed inside a muffin tray.

Sift the dry ingredients briefly for an especially even batter.

If the ingredients aren't cold, Nutella mixes more easily with the buttermilk.

Don't overmix, otherwise the muffins will become dense.

A scoop or ice cream scoop makes this easiest; fill the cases only about two thirds full.

Near the end, test with a wooden skewer: it should come out almost dry; if not, bake 2–3 minutes longer.

This makes them easier to remove from the tin and less likely to break.

On a rack, moisture escapes better, so the bottoms won't become soggy.

A dollop of Nutella on top or some chopped hazelnuts work particularly well.
