Irish Apple Cake

Preheat the oven to 180 °C fan (or 200 °C conventional) and prepare a loaf pan (about 30 cm).

Peel the apples, remove the cores and cut them into small cubes.

Put the flour, sugar and baking powder into a large bowl and briefly mix together.

Add the apple cubes to the flour mixture and toss them briefly so they are coated.

Pour in the cooled, liquid butter.

Beat the eggs, stir in the lemon juice and finely grated lemon zest, and add the mixture to the bowl.

Add the whisky and quickly stir everything into a smooth batter.

Pour the batter into the loaf pan and bake the cake for about 40 minutes.
