Filled Butter Cookies

Preheat the oven to 160°C fan (conventional oven: 180°C) and line a baking sheet with parchment paper.

Beat 130 g soft butter with the sugar, 1 packet of vanilla sugar and the egg until creamy and light.

Mix the flour with the baking powder and briefly stir in until a smooth dough forms.

Shape small balls from the dough, place them on the sheet with some space between and lightly flatten with a fork.

Bake the cookies for about 15 minutes, then remove them from the sheet and let cool completely on a wire rack.

For the filling, beat 90 g soft butter with powdered sugar, 1 packet of vanilla sugar and vanilla liqueur until creamy and smooth.

Sandwich two cookies together with some filling and press together lightly.

Store the filled butter cookies chilled until serving.
