Cinnamon Caramel Cookies

Preheat the oven to fan 175 °C (conventional 190 °C) and line a baking sheet with parchment paper.

Cream the soft butter and sugar together in a bowl until light and fluffy.

Add the egg yolk and vanilla extract and briefly stir until combined.

Sift the flour with cinnamon, allspice and a pinch of salt over the mixture.

Quickly mix everything into a smooth dough, avoiding overworking.

Form walnut-sized balls from the dough and place them on the baking sheet with plenty of space between them.

Bake the cookies for 8 minutes.

Remove the sheet briefly and immediately place a soft caramel candy on each cookie.

Return the cookies to the hot oven and continue baking until the candies have melted.

Remove the cookies from the sheet and let them cool completely on a wire rack.
