Strawberries with Yogurt Cream

Soak 4 sheets of gelatin in cold water.

Rinse the strawberries, let them drain well and hull them.

Puree half of the strawberries with lemon juice, a little lemon zest and 1 packet of vanilla sugar until smooth.

Cut the remaining strawberries into small pieces and set aside.

Squeeze out the soaked gelatin, dissolve it and stir it into the strawberry purée.

Chill the strawberry purée until it begins to gel, then fold in the strawberry pieces.

Soak the remaining gelatin in cold water.

In a bowl, stir the natural yogurt smooth with powdered sugar and vanilla sugar.

Squeeze out the soaked gelatin, dissolve it and stir it into the yogurt mixture.

Chill the yogurt cream until it begins to set.

Whip the cream until stiff and gently fold it into the partially set yogurt cream.

Layer the strawberry mixture and the yogurt cream alternately into tall glasses.

Chill the dessert for about 60 minutes.

Garnish with a little lemon zest and serve.
