Refreshing Lemon Cake

Preheat the oven to 180°C (top and bottom heat) and line a baking sheet with parchment paper.

In a bowl, mix the spelt flour, cane sugar and baking powder well.

In a second bowl, beat the egg, yogurt, oil, finely grated lemon zest and lemon juice with a mixer.

Add the liquid mixture to the flour mixture and briefly stir into a smooth batter.

Spread the batter evenly onto the prepared baking sheet.

Bake in the preheated oven for about 30 minutes, until the cake is cooked through.

While still warm, poke the cake several times with a wooden skewer and lightly soak it with sweetened lemon soda.

Spread a lemon glaze over the cake and, if desired, decorate with individual lemon balm leaves.
