Party Sun

Sift the flour into a large bowl.

Stir 150 ml lukewarm water together with the fresh yeast and the sugar, cover and let rest for 15 minutes.

Roughly combine the flour, the yeast mixture, salt and a further 250 ml lukewarm water.

Knead the dough on a floured work surface for about 8 minutes until smooth and elastic.

Place the dough in a lightly floured bowl, cover and let rest for 30 minutes.

Briefly knead the dough, shape it into a log, divide into 10–12 equal pieces and form into balls.

Place the dough balls on a baking sheet lined with parchment paper in a circular sun shape, leaving a little space between them.

Cover the formed sun and let it rise for another 30 minutes in a warm place.

Preheat the oven to 190 °C top/bottom heat (170 °C fan).

Whisk the egg yolk with a little water, brush the surface with it and, if desired, sprinkle with poppy seeds, coarse salt, sesame and caraway.

Bake on the middle rack for 35–40 minutes until the sun is golden brown, then let cool briefly.
