Olive Paste

Drain the olives and place them in the blender together with the diced feta, the garlic cloves and a splash of olive oil.

Pulse briefly and occasionally scrape the mixture down from the sides until a creamy, spreadable paste forms.

Season with salt and pepper and, if needed, mix in a little more olive oil for a softer consistency.

Serve the olive paste or transfer it into a clean jar.
