Crunchy Apple Cake

Grease a 26 cm springform pan.

Crush the amaretti into fine crumbs.

Mix the flour, salt and soft butter until you have a crumbly mixture.

Stir in 50 g sugar, the vanilla sugar and the amaretti crumbs, folding them in with a spatula.

Press the mixture evenly into the bottom of the springform pan.

Preheat the oven to 180 °C fan (conventional: 200 °C).

Peel the apples, quarter them, remove the cores and shave into very thin slices.

Arrange the apple slices tightly next to each other on the crust with the rounded side up.

Mix 2 tablespoons sugar with cinnamon. Melt 25 g butter, brush it over the apple slices and sprinkle with the cinnamon-sugar mixture.

Bake on the second shelf from the bottom for 30–40 minutes until the apples are tender and the surface is golden and crisp.

Let cool briefly in the pan, then release the ring and let cool completely before slicing.
