Chocolate Guetzli

Preheat the oven to 150 °C fan (conventional: 175 °C) and line a baking sheet with parchment paper.

Finely chop the white chocolate.

In a bowl, thoroughly combine the flour, baking powder, salt, gingerbread spice, chopped chocolate and chocolate chips.

In a separate bowl, beat the butter, brown sugar, egg and cream until creamy.

Add the flour‑and‑chocolate mixture to the butter mixture and fold in briefly until just combined into a dough.

Use two teaspoons to place small mounds of dough with some space between them onto the parchment paper.

Bake the cookies for about 13 minutes.

Remove the cookies from the oven and let them cool briefly on the sheet, then carefully transfer them to a wire rack.

If desired, decorate with melted couverture and allow to set.
