Buttermilk Yeast Muffin

In a bowl, mix the flour, instant yeast, finely grated lemon zest, salt, sugar and vanilla sugar well.

Warm the buttermilk in a small saucepan or in the microwave to lukewarm and melt the butter in it.

Add the buttermilk-butter mixture to the flour mixture and knead everything into a smooth, pliable dough.

Cover the dough and let it rise in a warm place for about 60 minutes, until it has visibly risen.

Briefly knead the dough again, divide into 12 equal pieces and place in muffin tins.

Cover the dough pieces and let them rise again for about 30 minutes.

Preheat the oven to 200 °C (convection).

Bake the muffins for about 20 minutes, until they are golden brown.

Let the muffins cool briefly, remove them from the tins and cool completely on a wire rack.
