Bat Cookies

For best results, sift the cocoa powder beforehand so the dough becomes more even and lump-free.

Knead only until the dough just comes together; this keeps the cookies tender.

As a flat disk the dough chills faster and will be easier to roll out later.

While the oven heats, let the dough rest briefly at room temperature; it will tear less when rolling.

Dip the cutter in flour from time to time to keep the edges clean.

If the dough softens, chill the cut cookies for 10 minutes before baking so they keep their shape.

The cookies are done when they feel firm; they will darken slightly as they cool.

For decorating use, for example, icing, chocolate or sugar eyes; apply decorations only after the cookies have fully cooled.
