Applesauce Cinnamon Muffin

Preheat the oven to 160°C (fan). Line a muffin tin with paper cases.

In a bowl, mix the flour, baking powder, sugar, cinnamon and ground cloves well.

In a second bowl, beat the eggs, lemon juice, applesauce, milk and (soft) butter until frothy.

Add the flour mixture to the applesauce mixture and fold in briefly until just combined.

Spoon the batter into the cases. Mix 2 tablespoons of sugar with 1/2 teaspoon of cinnamon and sprinkle over the muffins.

Bake the muffins for 20–25 minutes. Let rest for 5 minutes, remove from the tin and cool completely on a wire rack. Decorate as desired.
