Vanilla-Chocolate Squares

On a work surface, quickly knead together the flour, ground almonds, sugar, vanilla sugar, egg yolks, chocolate shavings and butter into a smooth dough.

Shape the dough into a flat disc, wrap in cling film and chill in the refrigerator.

Preheat the oven to 150 °C fan (175 °C conventional) and line a baking sheet with parchment paper.

Roll the dough thinly and cut or stamp out squares; on half of them cut a small star or a hole in the center.

Place the squares on the baking sheet and bake for about 10 minutes.

Let the cookies cool completely on a wire rack.

Warm the strawberry jam briefly until it is spreadable.

Place a spoonful of jam on the solid cookies, dust the cookies with holes with powdered sugar and place them on top.
