Schüttelbrot Ribbon Noodles

Place flour, Schüttelbrot crumbs, egg, olive oil and salt in a bowl and knead into a smooth, supple dough.

Shape the dough into a ball, wrap it in cling film and let it rest for about 20 minutes.

Flatten the dough in portions and roll it out with the pasta machine until you reach the desired thinness.

Cut the sheets into ribbon noodles using the ribbon attachment (or by hand).

Bring plenty of salted water to a boil and cook the ribbon noodles until al dente.
