Polar Bear Cookies

Cream the softened butter and sugar until fluffy, then beat in the egg yolk.

Sift in the flour and a pinch of salt, add 100 g desiccated coconut and quickly mix everything into a smooth dough.

Divide the dough in half, shape into balls, wrap in cling film and chill for 30–60 minutes.

Preheat the oven: fan 175 °C (conventional 190 °C). Line a baking sheet with parchment paper.

Roll the dough out to about 4 mm thick on a floured surface or between two sheets of parchment paper, then cut out polar bears.

Place the polar bears on the baking sheet and bake for about 10 minutes.

Remove the cookies from the sheet and let them cool completely on a wire rack.

Beat the egg white with the powdered sugar and a little lemon juice using a hand mixer to make a smooth glaze.

Spread the glaze over the cookies and immediately sprinkle with coconut flakes.

Let the polar bears dry on the wire rack until the glaze is set.
