Orange Ice Cream

Wash a bio orange with hot water, dry well and finely grate the peel.

Juice all the oranges and set the juice aside.

In a bowl thoroughly stir together orange juice, sugar, whole milk, cream, grated orange peel, a small pinch of salt and a little orange flavoring until the sugar has dissolved.

Pour the ice cream mixture into the ice cream maker (1 L capacity, approx. 600 g liquid) and freeze until it reaches the desired consistency.

Optional: Segment two oranges, cut the segments into small pieces and fold them in once the ice cream in the machine has become noticeably firmer.

Divide the finished orange ice cream into dessert glasses and decorate as desired.

Without an ice cream maker: Whip the cream until stiff peaks form and fold it in gently at the end into the well-mixed orange‑milk mixture, then pour into a shallow container and freeze.
