Mars Cookies

If you only have one baking sheet, bake in two batches – the dough can chill briefly in the meantime.

Use a lightly oiled knife or cut on baking paper so less caramel sticks.

The butter is ideal when it yields slightly to the touch but is not liquid.

Mixing for a few minutes makes the cookies a bit airier later.

Use an egg at room temperature so it incorporates more evenly into the dough.

Only mix until no dry flour is visible – this keeps the cookies tender.

If the Mars pieces are very soft, chill the dough for 10 minutes to make portioning easier.

For even cookies, briefly dip the spoons in cold water between portions.

The cookies will still be soft right after baking — they firm up as they cool.

Suitable decorations include melted chocolate, colorful sprinkles, or a dusting of powdered sugar.
