Lemon Lucky Piglets

Lightly dust the greased pan with flour or breadcrumbs so the pig cake releases particularly cleanly.

Only grate the yellow part of the lemon peel; the white pith underneath will make the cake bitter.

Ingredients at room temperature whip up faster and give a more even result.

Don't overmix, otherwise the cake can become dense.

Tap the pan 1–2 times on the work surface to release large air bubbles.

From minute 40 do the skewer test: if the wooden skewer comes out dry, the cake is done.

Turning it out too early can break the shape — the short resting time stabilizes the cake.

If it sticks, place the pan briefly on a warm, damp cloth — this helps the cake release more easily.

Powdered sugar, lemon glaze or white chocolate go especially well with the fresh lemon flavor.
