Lard Cookies (Schmalznüsse)

Preheat the oven to 150 °C fan (conventional oven: 175 °C) and line two baking sheets with parchment paper.

In a mixing bowl, combine the flour, hartshorn salt (baker's ammonia), sugar and vanilla sugar well.

Add the lard and butter in small pieces and quickly knead into a smooth dough.

Divide the dough in half and knead the cocoa powder evenly into one half.

From both doughs, form about 25 evenly sized balls each and press a dent into the centre of each ball with your thumb.

Place the lard cookies on the prepared sheets with some space between them.

Bake in the preheated oven for about 14 minutes.

Remove the cookies from the oven and let them cool completely on a wire rack.
