Chocolate Shortcrust Cookies

Cut the milk chocolate into small cubes.

On the work surface, quickly knead the flour, powdered sugar, egg yolk, cold butter pieces and the chocolate cubes into a smooth dough.

Shape the dough into two equally sized rolls.

Wrap the rolls in cling film and chill in the refrigerator for about 60 minutes.

Preheat the oven to 150°C (fan) and line a baking sheet with parchment paper.

Slice the chilled rolls and place them on the baking sheet with some space between them.

Bake the chocolate shortcrust rounds for about 15 minutes.

Remove the cookies from the sheet and let them cool completely on a wire rack.
