Cheese Puff Pastry Triangles

Preheat the oven to 175 °C (convection) and line a baking sheet with parchment paper.

Roll the puff pastry sheets briefly on a lightly floured surface and cut them into small triangles.

Beat the egg yolk with a little water into a smooth egg wash.

Brush the triangles with the egg wash and sprinkle them evenly with grated Edam.

Place the triangles on the sheet with some space between them and bake for 10–15 minutes until golden brown.

Remove the cheese puff pastry corners from the oven and let them cool on a wire rack.
