Aztec Gold

Coarsely to medium-finely chop the peanuts.

Thinly grease a baking sheet with neutral oil and set it aside.

Place sugar, light beet syrup and 125 ml water in a small saucepan and heat while stirring.

Continue cooking until the sugar has completely dissolved and a light caramel forms.

Fold the chopped peanuts and a pinch of salt into the caramel and cook for 1–2 minutes more, stirring constantly.

Remove the pan from the heat and quickly stir in the butter and baking powder.

Immediately pour the caramel onto the prepared sheet and spread it thinly.

Let cool completely and then break into pieces.
