Sweet Chocolate Flowers

The finer the chocolate is chopped, the faster and more evenly it will melt.

Make sure no water or steam gets into the chocolate.

Cut very large cranberries in half briefly so the chocolates will come out of the mould more easily later.

Using a small spoon or a piping bag allows for cleaner portioning.

Press the cranberries in lightly so they embed well and don't fall out later.

Tap the mould lightly on the work surface a few times to release air bubbles.

Press the decorative cranberry in only lightly so it remains nicely visible.

To set them faster, put the mould in the fridge for 10–15 minutes, but not too long to avoid condensation.

If they are difficult to release, warm the mould briefly with your hands and then gently push them out again.
