Snowballs

For particularly fine truffles, chop the chocolate evenly into small pieces so it melts faster.

The water should only simmer gently and the bowl should not touch the water to avoid overheating.

When grating the orange, use only the colored zest — the white pith will make the mixture bitter.

If you need it faster, place it in the freezer for 30–40 minutes and check occasionally so it doesn't become too hard.

It's easiest to do this with a vegetable peeler on a cold chocolate bar.

Briefly rinse your hands with cold water or lightly oil them to prevent the mixture from sticking.

For a more even coating, chill the balls briefly after the first roll and then roll them a second time.

Stored chilled and airtight, the truffles will keep for about 2 weeks.
