Ricotta Lemon Ice Cream

Thoroughly wash the lemon, finely grate the zest and squeeze out the juice.

Place the ricotta, sugar, whole milk, cream, lemon zest and lemon juice in a bowl and stir until smooth.

Pour the mixture into the ice cream maker and freeze until creamy.

Without an ice cream maker: Whip the cream until stiff, fold it gently into the ricotta mixture at the end and place in a shallow container in the freezer to set.
