Raspberry Liqueur

The drier the fruit, the clearer the liqueur and the lower the risk of unwanted fermentation.

For a finer aroma, slice the lime as thinly as possible so fewer bitter compounds from the white pith are released.

Split the vanilla pod lengthwise to release more flavor.

Do not fill the jar to the brim so the contents can move freely when shaken.

Every few days give it a short swirl or gentle shake so the rock candy dissolves more easily.

For an extra clear liqueur, filter again through a sieve lined with cheesecloth or a coffee filter.
