Pear Ice Cream

The better the pears are drained, the creamier the ice cream will be.

Taste briefly at the end and adjust sugar and lemon juice according to the sweetness of the pears.

If you don't have an ice cream maker, whip the cream until stiff and only fold it in at the end; when freezing in the freezer, stir the mixture vigorously every 30–45 minutes to reduce ice crystals.

Let it soften for 5–10 minutes in the fridge or at room temperature before scooping; it will be easier to portion.
