Mocha Pudding with Cherries

In a bowl, stir the pudding powder with the sugar and 6 tablespoons of milk until smooth.

Bring the remaining milk to a boil in a saucepan.

Stir the prepared pudding mixture into the boiling milk, add the instant coffee powder and simmer gently while stirring for about 3 minutes.

Pour the pudding into a bowl, cover the surface directly with cling film and let cool.

Wash the fresh cherries, let them drain well and pit them.

Whisk the cornstarch with the vanilla sugar and 4 tablespoons of cherry juice until smooth, bring the remaining cherry juice to a boil, stir in the starch mixture and simmer for about 2 minutes.

Remove the pan from the heat, stir in the cherries and let the cherry compote cool.

Whip the cream until stiff and gently fold in about one third into the cooled pudding.

Divide the cherry compote among serving bowls, spoon the mocha pudding on top and dot with the remaining cream.

Decorate with chocolate shavings if desired and serve.
