Knabstrupper Muffins

For fan (convection) ovens, 160–170 °C is usually sufficient.

Alternatively use paper liners to prevent sticking.

Mix only until everything is just combined for especially light muffins.

A teaspoon of flour tossed with the sprinkles helps them distribute more evenly in the batter.

Using two spoons or an ice cream scoop makes portioning neat and even.

Toothpick test: they are done when a wooden skewer comes out clean.

After 5–10 minutes, loosen them and then transfer to a rack to cool completely.
