Coffee Cookies

Thoroughly mix the flour, cocoa powder and instant coffee in a bowl.

Work the soft butter with the powdered sugar and the scraped seeds of the vanilla pod until the mixture is even.

Add the dry ingredients to the butter–sugar mixture and knead into a smooth dough.

Wrap the dough in cling film and chill in the refrigerator for about 60 minutes.

Preheat the oven to 180 °C (top and bottom heat) and line a baking sheet with parchment paper.

Shape walnut-sized balls of dough and place them on the sheet with plenty of space between them.

Flatten the balls into cookies with a fork.

Bake the cookies for 15–18 minutes and then let them cool completely on a wire rack.
