Chocolate Parfait

Coarsely chop the chocolate or break it into pieces.

Heat the whole milk and cream in a saucepan until the mixture is hot but not boiling.

Add the chocolate to the hot milk-cream mixture and stir until completely dissolved.

Prepare a hot water bath and set a heatproof bowl on it so it does not touch the water.

Whisk the egg yolks and sugar in the bowl over the water bath until frothy and light creamy.

Gradually add the warm chocolate milk to the egg yolk mixture while whisking constantly and continue whisking until a thick creamy mixture forms.

Place the bowl in a cold water bath and stir the mixture until completely cooled.

Pour the mixture into a mold or into ramekins and put it in the freezer.

During freezing, stir thoroughly every 30 minutes until the mixture becomes noticeably firmer.

Allow the parfait to freeze through completely and briefly temper before serving.
