The smaller the pieces, the faster they melt in the warm cream.

If the cream is just steaming slightly, the temperature is ideal.

Remove from the heat as soon as the chocolate is added so the mixture stays particularly smooth.

A mixture that is too warm would later thin the sour cream.

Only stir until everything is combined so the cream remains stable.

Place the piping bag in the fridge for a few minutes if the cream is still too soft.

For a fine aroma, sift the cinnamon over the kisses through a small sieve.
