Elderflower Syrup

Gently shake the elderflowers and remove any large stems.

Put the water into a large bowl and stir in the sugar and citric acid until everything is well distributed.

Add the elderflowers to the sugar solution and stir everything thoroughly.

Cover the bowl and let the mixture steep for about 1 1/2 days at a cool room temperature.

Stir several times during the steeping period.

Strain the syrup through a fine sieve or a clean cloth and let the flowers drain well.

Pour the elderflower syrup into clean bottles and seal them tightly.
