Lavender Sugar

Crush dried lavender flowers finely in a mortar or use an immersion blender to mix them until they are as finely chopped as possible.

Thoroughly mix 150 g fine granulated sugar with 1.5 tablespoons of the crushed lavender flowers.

Transfer the lavender sugar into a clean, dry jar with a screw lid and seal it well.

Store the jar in a dark place that is not too warm for 8 to 10 days so the sugar can absorb the aroma.

After the infusion time the lavender sugar is ready to use and can be used like vanilla sugar to flavor dishes.
